Coffee-boiler 95°C is not the 97°C warning or the 93.8°C display

Shows that La Marzocco Strada AV and Linea PB operating manuals examined here attach three different coffee-boiler temperature kinds of claim that do not coincide: Strada’s parts description prints an adjustable operating temperature of 95°C; the same manuals’ scalding warnings print Coffee Boiler 207°F / 97°C; and the software/display illustrations repeatedly show 93.8°C — while Linea PB examined here coffee-boiler parts pages omit Strada’s 95°C operating-temperature bullet.

On a saturated-group La Marzocco the coffee boiler is the thermal object that sits under the group. Field talk often collapses “brew temperature,” “coffee-boiler temperature,” and whatever number appears on a warning sticker into one figure. The operating manuals examined here do not.

This article reconciles three coffee-boiler temperature kinds of claim inside those manuals. It is not about steam-boiler °C/bar pairs, heat-up expansion pressure, or home-machine open-group flow tests already treated elsewhere on this site.

What Strada prints as operating temperature

Source document: La Marzocco Strada AV Operating Manual V2.012/2016, document code MAN.16.1.02EN.

In the coffee-boiler parts description the manual states that coffee-boiler temperature is held by an electronic controller (PID capable) with an accuracy of 0.2°C, then prints:

Operating temperature 95°C (adjustable), controlled automatically by an electronic temperature controller with an accuracy of 0.2 °C. Operating pressure of 9 bar.

That is a manufacturer operating-temperature claim for the coffee (“saturated”) boiler: 95°C, labelled adjustable, alongside a separate operating-pressure claim of 9 bar. It is not a Scace brew-water measurement, and it is not the scalding figure on the same file’s warning blocks.

What the same manuals print in the scalding warning

The same Strada AV PDF, in an installation warning block, states that the coffee boiler and steam boiler contain water at elevated temperature and that water over 125°F / 52°C can cause severe burns, then parenthetically names:

(Coffee Boiler 207°F/97°C - Steam Boiler 256°F / 124°C)

Linea PB Operating Manual V3.2 examined here (12/2015, Man.10.1) and V5.1 (12/2024, Man.10.1.04) reprint the same Coffee Boiler 207°F / 97°C and Steam Boiler 256°F / 124°C pairing in their matching warning blocks.

Two conversion checks keep the warning from being misread as a rounded restatement of Strada’s 95°C operating line:

The warning’s coffee-boiler Celsius figure is therefore not Fahrenheit rounding of the 95°C operating claim. It is a separate hazard-illustration temperature printed beside the burn warning.

The steam half of the same parenthesis (124°C) is cited here only as proof that the warning block is naming illustrative boiler temperatures for both vessels. It is not used to revisit steam °C/bar locus questions.

What the software pages show as 93.8°C

Across the Strada AV and Linea PB manuals examined here, the first-use / display-operating pages repeatedly illustrate the coffee-boiler reading as 93.8°C (also printed as 93,8°C in comma-decimal screens). The surrounding prose says the rectangles beside CB and SB track warm-up to “the set temperature”; it does not, in those passages examined here, state that 93.8°C is the factory default, a recommended brew target, or the same claim as “Operating temperature 95°C.”

Linea PB V5.1’s barista-programming map adds nearby illustration values without collapsing the classes: a menu header shows coffee-boiler figures around 95.5 / 95.1, and the CB1 Temperature page shows 94,5°C and 95,0°C as on-screen examples. Those are still interface illustrations in the manual, not a second parts-section operating-temperature sentence.

So the sources examined here contain a third kind of claim: display / programming illustration temperatures clustered near the mid-nineties, with 93.8°C as the repeated first-use screenshot figure.

Linea PB’s parts section does not reprint Strada’s 95°C bullet

Linea PB V3.2 and V5.1 coffee-boiler parts pages examined here state the hydraulic test at 18 bar, operating pressure 9 bar, and PID-capable control to 0.2°C accuracy. In the pages relied on here they do not reprint Strada’s bullet “Operating temperature 95°C (adjustable).”

That is a document difference, not a hardware conclusion. The Linea PB files still carry the 97°C warning and the 93.8°C display illustrations. What they omit, among the parts text examined here, is Strada’s explicit 95°C operating-temperature line.

Three kinds of claim, one vessel name

The vessel name is shared. The kinds of claim are not. Treating “La Marzocco coffee boiler temperature” as a single number requires picking one of these classes and silently discarding the others.

What can and cannot be concluded

Established here. In Strada AV MAN.16.1.02 EN V2.0 examined here, the coffee boiler’s parts description gives an adjustable operating temperature of 95°C, while the same file’s scalding warning gives Coffee Boiler 207°F / 97°C, and the software illustrations give 93.8°C. Linea PB V3.2 and V5.1 share the 97°C warning and 93.8°C illustrations but omit Strada’s 95°C operating-temperature bullet on the coffee-boiler parts pages examined here. Those are three documented temperature kinds of claim attached to one named vessel.

Not established here. Which figure a technician should set on a given serial; that 93.8°C is the factory default rather than a screenshot convention; that the warning’s 97°C is a brew setpoint; that cup temperature equals any of these boiler figures; or that every La Marzocco model reprints Strada’s 95°C line. No recipe or service procedure follows from the disagreement.

What was not checked

Only the three La Marzocco operating manuals examined here are used for the temperature statements about kinds of claim. This site’s separate Strada AV article on heat-up expansion ceilings concerns bar figures on coffee-boiler pressure hardware, not these Celsius/Fahrenheit temperature claims. Focused search before drafting did not surface a free reconciliation of the 95°C / 97°C / 93.8°C split; that is scoped to that search, not a global absence claim.
